I’ve tried several variations of this watermelon soup. I’ve thrown basil, cilantro and lemon grass into the mix on different occasions. The final take? Try them all, each herb gave a unique taste profile that I think you’ll enjoy.

We love this soup chilled. Chill it at least a couple hours before serving.

Serves: 4

Watermelon Soup Ingredients

6 cups coarsely chopped seeded watermelon – discard the rind
1 fresh lemongrass stalk*
2 tablespoons of fresh basil or cilantro
3 tablespoons finely chopped shallot
2 tablespoons finely chopped peeled fresh ginger
1 tablespoon finely chopped garlic
1 1/2 tablespoons olive oil
1 tablespoon of finely chopped jalapeno or serrano pepper or to taste – for some friends, I leave the seeds
2 tablespoons fresh lime juice, or to taste
3/4 teaspoon salt or to taste. I am going to try a version with fish sauce soon. Consider using 1/2 a teaspoon first and then adjust to taste

Cucumber Mint Salsa

1/4 cup of diced cucumber
2 tablespoons of finely chopped mint
2 tablespoons of red wine vinegar
salt and pepper to taste

Grilled Sea Scallops

4 fresh sea scallops
olive oil for grilling

Preparation for soup

  1. For the watermelon soup:
  2. Puree the watermelon in a blender
  3. Add 2 tablespoons of olive oil into a medium saucepan. Saute the shallots, ginger, garlic and jalapeno until you get a nice fragrance flowing and the ginger and garlic start turning into a golden color. Use a low heat to prevent the garlic from burning and getting bitter.
  4. Pour in 2 cups of purred watermelon into the saucepan and bring to simmer over medium heat for about 5 minutes. Pour everything back into the blender and add the basil/cilantro and lime and blend.

Preparation for Scallops

  1. Remove the scallops from the refrigerator 45 mins. before grilling
  2. Preheat your grill to a high heat
  3. Lightly coat the scallops with olive oil
  4. Season with pepper
  5. Grill scallops about 2-3 minutes per side depending on thickness

Preparation for Cucumber Mint Salsa

  1. Mix all of the ingredients into a small bowl
  2. Season with salt and pepper
